I've read the guide to fitting these dials and all seems good. The only thing, I don't have axle stands at the moment, do I really need to do the calibration thing if I'm careful re positioning the needles correctly?
the calibration is very rarely needed. If you disconnect the battery before fitting the dials the cluster will normally do an automatic dial sweep when the battery is reconnected.
Just make sure you know any radio codes before disconnecting the battery.
If the dials don't do an auto sweep to reset themselves I'm sure the is a wiki guide in how to get the dials to do the sweep.

Edited to add: I've just seen you gave an ST tdci. The cluster dials in the mk3 are plug and play. Some TDCI owners have fitted silver 220 dials into their cars and the Rev counter and speedo needles work correctly at the correct speed and revs.
Depending on how much of a change you want and what year your car is you can also swap the silver dial surround's for ST220 ones or aftermarket chrome dial surround's.

Are you saying that after running you car for long enough for the car to reach normal operating temp the needle is still at cold?

As you know the ford wiki gave a look on there for the self test (can't remember the name right now) guide that shows how to put the cluster into info/test mode. One of the functions will show engine temp from memory and you can use that to accurately set the temp needle

The needle can be moved to any position. You could have just set the needle to the correct temp
The cluster diagnostic mode would allow you to confirm the temp was correct.
