Temp gauge shows head temperature not coolant. Now you have coolant, head will be being cooled....if it doesn't hit temp after a reasonable time, then you probably have a stat(s) failure. But q1 is why did coolant go?
Tdci is a cool running engine. May rarely get to above 100c, esp during cooler months, so rarely much pressurised. Not so obvious places it leaks from include egr cooler into exhaust, pump, and expansion tank splits or oring failure (it has an internal overflow, bit of rag under it may act as telltale).
Yes, you need anti-freeze to prevent corrosion as well as prevent freezing.
Just be careful because antifreeze can sometimes dislodge debris that has a sealed a hole up.
