Its usually caused by the differences in air temperatures, and the chances are your seals are slowly rotting.
Check the window seal strips and the boot strip to make sure it is all intact. They tend to rot along the window edges especially if you can start seeing fine scratches in the glass

this got me for a while on my mk 3 , i hadnt noticed the air system was in recirc mode , the car was steaming up like crazy , knocked it out of recirc mode and all is well again :L

At this time of the year when you park the car up last thing, it's always a good idea to set your heater directional-controller to the 'O' position (where it shuts down the fan & closes the vents from the outside). That should reduce the condensation build-up :L
